Cold brew is coffee brewed in cold or room-temperature water over an extended time — usually 12 to 24 hours. The result is smooth, low-acid, and surprisingly sweet without adding anything. On a warm Büyükada afternoon, few things work better.

This guide explains the method and why cold brew behaves so differently from iced espresso or regular coffee poured over ice.

How Cold Brew Is Made

The process is genuinely simple: coarsely ground coffee and cold water are combined in a ratio of around 1:4 to 1:8 (coffee to water) and left to steep — in the refrigerator or at room temperature — for 12 to 24 hours. The grounds are then filtered out, leaving a coffee concentrate or ready-to-drink brew.

No heat is involved at any point. This is the key difference from every other brewing method, and it's what changes the flavour so dramatically.

Why Does Cold Brew Taste So Different?

Heat extracts quickly and pulls out a wide range of compounds — including the acids that create brightness and the compounds that create bitterness. Cold water extracts slowly and more selectively: it pulls sweetness and body but leaves much of the acidity and bitterness behind.

The result is a naturally sweet, round, and smooth cup. Cold brew concentrate can be diluted with water or milk, served over ice, or used as a base for other drinks.

Cold Brew vs Iced Espresso

Iced espresso is exactly that — espresso served cold, sometimes over ice or with cold milk. It retains all the intensity and acidity of espresso. Cold brew, by contrast, is never heated and has a fundamentally different extraction — shorter on acidity, longer on smoothness.

If you find regular iced coffee too sharp or too bitter in summer heat, cold brew is usually the better fit. Julius's cold brew is on the summer menu for exactly this reason.

When to Drink Cold Brew on Büyükada

The obvious answer is: on warm days. But more specifically, cold brew works best when you want refreshment without the sharpness of iced espresso — mid-afternoon by the water, after a walk on the island, or as a bridge between the day and the evening.
